Ingredients

  • For the apple crisp filling

  • 1 and 1/2 pounds apples
(680g) (about 6 cups sliced or chopped apples, which was 4 apples for me)
  • 1/4 cup brown sugar
    (50g) (packed)
  • 1 Tbsp cornstarch
    (7g) (or arrowroot starch)
  • 1 Tbsp lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup unsalted butter
    (56g) (4 Tbsp)
  • For the oatmeal crumble topping

  • 1/4 cup brown sugar
    (50g)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
    (62g)
  • 1/2 cup rolled oats
    (45g) (old-fashioned)
  • 1/2 cup chopped pecans, almonds, or walnuts
    (57g) (optional)

Instructions

  1. Position a rack in the center of the oven and preheat to 350°F (175°C).

    Chef’s tip

Make sure the oven reaches temperature before baking so the topping browns evenly.

  2. Quarter the apples, remove the cores, then slice or chop them into roughly 1-inch pieces or into thinner slices according to your texture preference; peeling is optional.

    Chef’s tip

Thinner slices yield softer fruit when baked, while larger chunks hold their shape better.

  3. Put the prepared apples in a mixing bowl and add 1/4 cup brown sugar, 1 Tbsp cornstarch, 1 Tbsp lemon juice, 1/2 tsp vanilla extract, 1/2 tsp cinnamon and 1/4 tsp nutmeg; toss gently until every piece is coated.

    Chef’s tip

If the mixture seems dry at first, let it sit 5 minutes so the sugar draws out some apple juices and the cornstarch begins to hydrate.

  4. Transfer the coated apples to an 8x8-inch (or 2‑quart) baking dish and spread into an even layer.

    Chef’s tip

Press the fruit down lightly so the pieces make contact for even cooking, but avoid compacting them completely.

  5. In a microwave-safe or small saucepan, melt 1/4 cup unsalted butter; then whisk in 1/4 cup brown sugar, 1/2 tsp cinnamon and 1/4 tsp salt. Stir in 1/2 cup all-purpose flour, 1/2 cup rolled oats and 1/2 cup chopped nuts (if using) until the mixture becomes crumbly.

    Chef’s tip

The topping should clump slightly when pressed between your fingers—if it looks powdery, stir a little longer so the butter distributes evenly.

  6. Scatter the oat topping evenly over the apples so the fruit is well covered.

    Chef’s tip

Leave a bit of topping at the edges to encourage even browning across the surface.

  7. Bake on the center rack for 40–45 minutes, or until the topping turns golden brown; the apple filling may or may not bubble up the sides.

    Chef’s tip

If the topping is browning faster than the filling is bubbling, tent loosely with foil for the remainder of the bake time.

  8. Remove from the oven and let the crisp cool for 5–10 minutes before serving warm.

    Chef’s tip

Allowing it to rest helps the juices thicken slightly so servings hold together better.

This apple crisp pairs tender, cinnamon-spiced apples with a crunchy oat-based streusel for a classic homestyle dessert. The fruit layer is thickened with cornstarch and brightened with a splash of lemon and vanilla, while the topping combines butter, brown sugar, flour, oats and optional chopped nuts so each spoonful balances soft, saucy apple and crisp, golden crumble. It bakes in an 8x8-inch (or 2‑quart) dish and serves six, making it suitable for a family weeknight treat or a simple potluck contribution. The recipe is easy to scale and lends itself to short make-ahead prep—assemble the filling and topping separately in advance, then spread the crumble and bake when you’re ready.
